Kueh Lapis

Ingredients: *25 egg yolks *5 egg whites *500 gm butter *200 gm sugar *1 tin condensed milk *170 gm plain flour *2 tbsp golden syrup *1 tsp vanilla essence *1 tsp mixed spices Method: 01.  Cream butter with condensed milk, vanilla essence, golden syrup & mixed spices till well mixed and set aside. 02.  Beat egg yolks with sugar until thick and creamy. 03.  Add beaten egg yolk mixture to the creamed butter mixture and mix well.  Fold in sieved flour. 04.  Beat egg whites with a pinch of cream of tartar till stiff and fold in the mixture. 05.  Grease and line an 8″ square tin and preheat tin. 06.  For first layer, spread 2 tbsps of mixture in tin and bake in oven 180 degree C for 10-15 mins. 07.  For subsequent layers, grill each layer for about 3 mins. 08.  When top most layer is completed, cover with a metal tray or a piece of foil and bake for a further 5 mins.  It will take longer if the sides are still wet. 09.  Turn cake out onto a metal grid and let cool completely before cutt...

Honey Cornflakes

Ingredients : *40g butter *1 tbsp sugar *1 tbsp honey *2 cups corn flakes *1/2 cup nuts (optional) *Raisins (optional) Method : 01. Melt butter over low heat. 02. Add in sugar and honey, stir till sugar is dissolved. 03. Add in corn flakes, nuts or raisins and mix well. 04. Spoon into small paper cups and bake at 180 degrees for 10 mins.

Pineapple Tarts

Ingredients: For the pastry: *250g butter *30g icing sugar *1 egg yolk + 1/2 egg whites *360g plain flour *2 tbsp custard powder Pineapple Jam Filling: *2 pineapples, grated *160g sugar (depends on the sweetness of pineapple) *2 cloves *3cm cinnamon stick *1 tbsp lime juice *1 egg, beaten for glazing Methods: 01. Pineapple jam: Put all ingredients into a big pot, bring to boil, lower fire and leave to cook till almost dry, stirring once in a while. When almost dry, keep stirring to prevent it from burning until golden brown and dry. Leave to cool. Divide into small parts and form into balls. 02. Pastry: Mix butter, icing sugar and egg yolk till creamy. Fold in flour and mix to form a dough. Place into the fridge to rest for 30 minutes. 03. Put pastry into the mould and pipe 5cm length. Place filling at one end and roll up. Glaze with beaten egg. 04. Bake at 180C till golden brown. Leave to cool before storing.

Christmas Fruit Cake

Ingredients: *1 cup currants *1 cup mixed candied peel *3/4 cup candied pineapple (chopped) *3/4 cup red candied cherries (halved) *3/4 cup raisins *1/2 cup brandy *1 cup all-purpose flour *1 teaspoon baking powder *1/4 teaspoon baking soda *1/8 teaspoon ground allspice *1/8 teaspoon ground cinnamon *1/8 teaspoon ground nutmeg *1 pinch of salt *6 tablespoons butter (softened) *1/2 cup packed brown sugar *2 tablespoons strawberry jam *1 tablespoon molasses *3 eggs *3/4 cups walnuts (chopped) Methods: 01. Mix the currants, mixed peel, pineapple, cherries, raisins and the brandy in a bowl, cover and let sit for 24 hours, stirring occasionally. 02. Mix the flour, baking powder, baking soda, allspice, cinnamon, nutmeg and salt in a bowl. 03. Mix 1/4 cup of the dry mixture into the wet mixture. 04. Mix the butter, sugar, jam and molasses in a bowl. 05. Mix the eggs into the butter mixture one at a time. 06. Mix the remaining flour mixture into the butter and egg mixture. 07. Chocolate Cake Ball

Ingredients: *1 Chocolate cake mix *1 Can chocolate frosting *1 Cup peanut butter *Melting chocolate Methods: Bake the chocolate cake per box directions. Cool and crumble. Mix in frosting and peanut butter. Roll into golf size balls. Freeze until you can easily work with them. Dip into melted chocolate. Freeze until chocolate is set. Wrap up in pretty cellophane and you have a tasty gift. You can use any flavor combination.

Light Swirl Coffee Cake with Maple Glaze

Ingredients: *2 cups cake flour *1 teaspoon baking powder *1 teaspoon baking soda *1/4 teaspoon salt *1/2 teaspoon cinnamon *3/4 cup white sugar *2/3 cup butter unsalted butter (room temperature) *1 cup plain yogurt *3 large eggs *1 teaspoon vanilla *1 tablespoon lemon juice *3 tablespoons apple butter *2 tablespoons cocoa powder *1/4 cup maple syrup *1 tablespoon corn syrup *1/8 teaspoon cinnamon *1/8 teaspoon nutmeg *1/8 teaspoon cloves *1/8 teaspoon ginger Methods: 01. Mix the flour, baking powder, baking soda, salt, cinnamon and sugar in a large bowl. 02. Beat in the butter and half of the yogurt and continue to beat for a few minutes. 03. Mix the eggs, vanilla, lemon juice, apple butter and the rest of the yogurt in another large bowl. 04. Mix the wet ingredients into the dry ingredients in 3 batches beating in between additions. 05. Cupcakes

Ingredients: * 6  tablespoons  unsalted butter, at room temperature * 1  cup  plus 2 tablespoons sugar * 2  large eggs * 1  teaspoon  vanilla * 2  cups  all-purpose flour * 2  teaspoons  baking powder * 1/2  teaspoon  salt * 2/3  cup  buttermilk Methods: 01. In a bowl, with a mixer on medium speed, beat butter and all the sugar until well blended. Add eggs and vanilla and beat on high speed until well blended. 02. Sift flour, baking powder, and salt into another bowl. 03. With mixer on low speed, beat about a third of the flour mixture into butter mixture, then about a third of the buttermilk. Repeat to beat in remaining flour mixture and buttermilk, alternating in thirds. When all the flour is incorporated, beat mixture on medium speed just until well blended. 04. Fill paper-lined or buttered muffin cups (1/3-cup capacity) about three-fourths full with batter (about 1/4 cup in each). 05. Banana Cake

Ingredients: *180 gm. Butter *180 gm. Fine sugar (I cut down to 150 gm) *2 nos. Extra large Eggs - beaten lightly *250 gm. Cake flour *1 tsp. baking powder *1 tsp. Bicarbonate of Soda *220 gm. Bananas - mashed *50 gm. Dairy whip cream (I use evaporated milk) *1/2 tsp. Banana essence (I replace with 1 tsp vanila essence) *2 bananas - slice Methods: 01.Cream butter and sugar till light and creamy. 02. Pour in eggs gradually and beat till creamy. 03. Add in whip cream, mashed bananas and banana essence and mix well. 04. Add in cake flour, baking powder and bicarbonate of soda and beat for a while only. 05. Pour into an 8" round tray, and arrange sliced bananas on top. 06. Bake at 175C for about 50 to 60 mins. or until cooked

Chocolate Lava Cake

Ingredients: 2 regular size dark chocolate bars with 75% cocoa 2 eggs 2 tsp suar 2 tbsp butter 2 cupcake sized baking tins Raspberries ( optional for serving) Orange Slice ( optional for serving) Methods: 01.Take a large pot and boil the water. 02In this pot lay another small pot and melt your butter and chocolate, leaving 4 cube pieces aside ( Italian word = Bango Maria) 03.When melted add your sugar and stir. 04.When a little warm beat your eggs in throughly. 05.Butter your cupcake sized baking tins and pour in the mixture equally. 06.( make sure to lick the pan dry, its too good to waste). 07.Insert 2 cube pieces of chocolate into the center and let it cool for about 15 mins. Preheat your oven to about 400 degrees and put your mix in. 08.Let it bake no more than 10 mins ( you will see it rise a little). 09.Remove from oven and let it cook for about 3 mins. 10.Hold a plate on the open end of the tin and invert it. 11.You should get a perfect shaped individual cake. 12.Serve immed...

牛油蛋糕 Butter Cake

Ingredients: 1 block butter = 250 gm (best brand SCS or Golden Churn) 230 (g ) castor sugar 4(pcs) eggs 250(g) self-raising flour 2 tsp vanilla essence about 6 tbsp UHT milk Methods: 01.Heat oven to 180 deg C. Line cake tin, size about 8 inches in diameter. 02.In a mixer, beat butter and sugar till white and fluffy. Add in eggs one at a time, alternating with flour. Add vanilla essence to milk and mix in. 03.Check the consistency of the batter. It should be of dropping consistency. If it stands peaking and hard, add more milk. Pour into baking tin and bake for about 50 mins.

马来糕 Malay Cake

Ingredient A: Low protein flour 240(g) Double action baking powder 2(tsp) Soda bicarbonate 1/2(tsp) Custard powder 60(g) Ingredient B: Vanilla essence 1/2 (tsp) Eggs (Grade A) 6 (pcs) Margarine(melted) 160(g) Brown Sugar 360(g) Dark soy sauce(optional) 1(tsp) Methods: 01.Beat eggs,add brown sugar gradually,beat mixture till thickens. 02.Fold in sieved ingredients A and mix well.Add in vanilla essence,leave to proof for 30-60 mins. 03.Add melted margarine and mix well.Pour mixture into steamer lined with paper and oil at the base,steam over high heat for 30 mins.

白糖糕 White Sugar Cake

Ingredient A: Yeast 1(tbsp) Cooked rice 100(g) Sugar 1(tbsp) Ingredient B: Water 350(ml) Sugar 230(g) Pandan leaves 4(pcs) Ingredient C: Rice flour 250(g) Water 200(ml) Ingredient D: Oil 1.5(tbsp) Double action baking powder 1(tbsp) Methods: 01.Mix ingredients A and set aside for 1day. 02.Mix ingredients B and cook until it boils.Add Ingredients C and leave to cool.Add ingredients A and set aside for another 18 hours.Remove pandan leaves. 03.Add ingredients D.Mix well and pour the batter into a 9 x 9 inches steaming tray.Steam for 20 minutes.Serve.
