Tuna Pasta Salad with Salsa Verde

Ingredients: (Serves 2)
* 150g (6oz) JUVELA Gluten-Free Fibre Penne (dry weight)
* Small tin of tuna (in olive oil)
* 2tbsp fresh parsley
* 2tbsp fresh basil
* 1tbsp capers
* 1garlic clove, peeled
* 1tsp Dijon mustard
* Zest & juice of a lemon

Methods:
01.Cook the Penne as per instructions on pack; drain and rinse thoroughly with boiling water.

02.Meanwhile, drain the tuna (keep the oil) and flake into a large bowl. In a food processor, whiz together herbs, capers, garlic, lemon juice and zest, and 2tbsp oil from tuna until finely chopped. Season with salt and freshly ground black pepper. Add to the tuna and stir in the freshly cooked pasta; stir to combine all ingredients.

Stewed Sweet and Sour Vinegar Trotter

Ingredients: *1 pig’s trotter, about 2kg, cleaned and chopped into big pieces *1 litre sweetened Chinese black vinegar *700ml Chinese black vinegar *800ml water *600g young ginger, crushed *2 tbsp sesame oil *100g rock sugar *100g palm sugar (gula Melaka) *10 black dates (hak choe) *½ tsp thick soy sauce, for colour Methods: 01.Blanch trotter in a pot of boiling water for 15 minutes. Remove and clean under running water to remove any scum. Drain. 02.Heat sesame oil in a heavy-based pot and fry ginger until fragrant. Pour in both vinegars and water, cover and simmer for 30 minutes before adding the trotter, both sugars and dates. Cover and bring to the boil. 03.Reduce the heat and simmer for an hour or until trotter is tender. Stir in thick soy sauce for colour and allow the trotter to soak in the sauce until the flavour has developed before serving.

Banana Honey Porridge

Ingredients 2 cups rolled oats 2 cups low-fat milk 2 cups water 1/20 teaspoon ground cinnamon 1/3 cup honey 2 bananas, sliced Method : Combine oats, milk and water in a saucepan. Bring to boil. Simmer, stirring, for about 5 minutes or until thick. Remove from heat. Stir in cinnamon and honey. Serve porridge topped with bananas. Tips... Replace honey with maple syrup or brown sugar. Stir in any combination of dried fruits or nuts.
